Food for the Full-Time Worker

So you've got an exercise regimen down and you're feeling pretty good. But you're ready to start feeling great. Fitness isn't complete without a healthy diet. We can work out all day and night, but if we're not fueling our body with the nutrients it needs, you'll never be performing at 100%.

 

As someone who works a full time job, has two dogs, a husband, and attempts to have a social life, it can be really tough to put a healthy dinner on the table every night. But with my hours and rigorous exercise routine, anything less than a quality meal won't cut it. 

 

I've been turning to my crock pot of late. There are some really delicious, healthy recipes that can make eating healthy easy. I found this one at laaloosh.com. It quickly became a household favorite. I love it cause not only does it taste great, but I prep it the night before, stick the pot from my crock in the fridge overnight, and then before I head out in the morning turn the cooker on. Dinner is waiting for me when I get home, and the whole house smells great.

Crock Pot Indonesian Chicken

 

You will need:

8 medium sized chicken drumsticks, skin removed

1 large onion, thinly sliced

1 15oz can light coconut milk

4 garlic cloves, minced

1 tsp ground ginger

1 tsp paprika

2 tsp salt

1/2 tsp black pepper

1/2 tsp cinnamon

1 tsp corianderJuice from

2 limesZest from

1 lime

1/4 cup cilantro, chopped

 

Instructions:

1.In a small bowl, combine 1 tsp salt, pepper, cinnamon, coriander, ginger, garlic and lime zest. Rub over chicken thoroughly and use it all. If you have any of this spice mixture left, add it into the crock pot with the coconut milk in the later step.

2.Place chicken in a crock pot, and cover with onions.

3.Pour in coconut milk, lime juice, remaining salt.

4.Cover and cook on low for about 5 hours.
